Steamed Cassava with Coconut Milk (Sawut Santan)

Preparation & cooking time: around 40 minutes
(Waktu persiapan & memasak: sekitar 40 menit)
Serves (Porsi): 2

Note (Catatan): increase all ingredients proportionally if you want to make more.
(Anda dapat menambah kuantitas bahan-bahan secara proporsional bila ingin menambah porsinya)

Ingredients (Bahan-bahan):

• 250 gr of cassava (singkong)
• 2 dessert spoons of fine grain palm sugar (2 sdm gula aren bubuk) or skip it (bisa dihilangkan).
• 4 dessert spoons of cane sugar (4 sdm gula pasir) or skip it (bisa dihilangkan).
• salt according to your taste (garam secukupnya)
• 6 - 7 pandan leaves (6 - 7 lembar daun pandan)
• 150 ml of coconut milk (santan).
• 3 - 4 drops of pandan food colouring (3 - 4 tetes pewarna pandan).
• 2 tea spoons of tapioca flour and then dillute it with 2 dessert spoons of water (2 sdt tepung tapioka yang telah diencerkan dengan air). Make sure that you stir it evenly before adding it into the boiling coconut milk vla (pastikan untuk mengaduk rata cairan ini sebelum memasukkan ke dalam vla santan yang telah mendidih).

Cooking method (Cara memasak):

• Grate the cassava using a cheese grater (parut singkong menggunakan parutan keju).
• Mix the grated cassava with the palm sugar and 2 dessert spoons of cane sugar (campur parutan singkong dengan gula aren dan 2 sdm gula pasir). You can skip this if you are avoiding sugar (langkah ini bisa dihilangkan bagi yang menghindari gula).
• Sprinkle it with salt and then mix it (taburi dengan garam lalu aduk rata).
• Cover the steamer holes using the pandan leaves and then put the grated cassava on top of the pandan leaves (Tutupi semua lubang pengukus dengan daun pandan, kemudian letakkan singkong yang telah diparut diatasnya).
• Steam it for about 20 minutes (kukus selama kurang lebih 20 menit).

How to make the coconut milk vla (cara membuat vla santan):
• Tie a half granny knot in the middle of the length of 1 - 2 pandan leaves (ikat 1 - 2 daun pandan membentuk dasi)
• Put the tied pandan leaves into the coconut milk. Add it with 2 dessert spoons of cane sugar and a sprinkle of salt (masukkan daun pandan yang telah diikat ke dalam santan. Tambahkan 2 sdm gula pasir dan sejumput garam)
• Boil and stir it using medium heat (didihkan santan menggunakan panas sedang).
• Add the boiling coconut milk vla with the dilluted tapioca flour and stir it evenly (tambahkan tepung tapioka yang telah diencerkan ke dalam vla santan yang mendidih dan aduk rata).
• Simmer the coconut milk vla until it has a thick consistency and then pick it up (didihkan vla santan hingga agak mengental lalu angkat)

How to serve (cara menghidangkan):

Put the steamed cassava on a plate and then bath it with the coconut milk vla (letakkan sawutnya di atas piring lalu siram dengan vla santan).
